chicken puff




salt
1 cup water
1/2 cup butter
1 cup all purpose flour
4 eggs

filling
2 cups chopped cooked chicken
18z crushed pineapple- drained
1/2 cup mayonnaise
1/4 cup chopped celery
1/4 cup thinly sliced onions
1/4 cup chopped pecans
2 tablespoons sweet pickle relish
1/4 teaspoon onion, salt and garlic powder
1/4 teaspoon paprika


in a sauce pan bring water, butter and salt to a boil. Add flour all at once and stir into until a smooth ball forms. remove from heat. let stand 5 min. Add eggs one at a time beat well after each. continue beating until smooth and shiny. Drop by teaspoonful 2 inches apart on greased pan. bake at 400F for 15-20 minutes. remove on wire rack and put a slit in each puff. split puffs apart, put tops aside. fill each with chicken filling and replace tops.
